You know we haven't been eating enough fruit around here, so I thought we needed one more thing to keep us regular! Ha, ha!
This is my Nanny's recipe that she has been making since the '70s! It is a favorite with our family!
One of my favorite things about this recipe is that you can mix them up and keep the batter in the refrigerator for a month, ready for a fresh batch of muffins!
Olivia woke up from her nap the other day with the biggest smile and said she could smell them baking.:)
Ingredients:
4 cups bran buds
2 cups boiling water
3 cups sugar
1 cup shortening
5 tsp. baking soda
1 tsp. salt
2 cups all bran cereal
1 qt. buttermilk
4 cups flour
4 eggs
2 cups raisins (at least!)
nuts optional
Pour boiling water over bran buds. Let set while creaming sugar, and shortening. And dry ingredients and mix together, adding the buttermilk alternatively. Mix well.
Cover and refrigerate- will keep for a month!
Bake 375 in greased muffin tin for 12-20 minutes.

Mmmm! We haven't made these for a few months - time to make another batch!
ReplyDeleteGreat to see this getting passed along - I make them and the girls love them for breakfast - sometimes I chop up apple & add it in, as well as using unsweetened applesauce instead of the oil. They're also good with a little brown sugar, butter, & rolled oats as a topping.
