Farmer's Omelet & flower craft

Here is Jan S.'s recipe from the shower!

1/4 cup butter
4 med boiled potatoes peeled and diced
1 med onion (thinly sliced)
6 ounces ham or sausage- finely diced
2 Tb snipped fresh chives
1/2 tb dried dillweed
6 eggs
1/2 cup milk
1/2 tb freshly ground pepper
1 cup shredded Monterey Jack Cheese
1 med tomato- sliced
1 med green bell pepper, sliced in rings
1 cup sour cream

Melt butter in 10 inch omelet pan or heavy skillet over medium h eat.  Add potatoes and onion and cook until tender, stirring often, 20-25 minutes.  Add ham, chives and dillweed.

Whisk eggs, milk, salt and pepper until well blended.  Pour over potatoes mixture.  Reduce heat to low, cover and cook until egg mixture is set, 15-20 minutes, do not over cook

Preheat broiler.  Sprinkle omelet with half of cheese.  Arrange tomato and green pepper on top.  Sprinkle with remaining cheese.  Broil until cheese melts.  Serve hot with sour cream.
