Hamburger Soup

I am so sorry if you are getting sick of me!  I really don't think I should be blogging when prego, but not to worry, the little nut will be here next month, so relief is coming. :)

Nanny says this is her "not so famous" hamburger soup, but it is delicious, and so perfect for feeding a large family or putting together in a hurry.  It is ultra comforting with a batch of fresh biscuits too.  I remember arriving many times in Washington, and Nanny would have this soup waiting for us.

Brown/scramble 1 lb. of lean hamburger with one chopped onion and salt and pepper to taste.

Add 6 (more or less is fine) canned beans with their juices.
Any of the following...
lima beans
kidney beans
black beans
red beans
pinto beans
garbanzo beans

1 can whole kernel corn
1 can of tomatoes with juice or fresh tomato
2 cups tomato juice
Additional fresh veggies and herbs as you like
Stir in one packet of onion soup mix

Cover and bring to boil.  Simmer for 30 minutes or so (until heated through).

It just keeps getting better!  Add more juice or water if needed.

  2. Mmmm! I've never made Nanny's hamburger soup until tonight. It was so yummy! The girls loved it! :)
