Sioux Breakfast Casserole

Wednesday, October 6, 2010

My great grandfather (Nanny's father) was a quarter Lakota Sioux (he was raised on the Rosebud Indian Reservation), and this recipe comes from a Sioux cookbook from Nanny.

Butter six slices of bread and place buttered side down in 13"x 9" pan.
Scramble and cook 1 lb. pork sausage
Sprinkle 2 cups grated cheese over bread, spread cooked sausage over cheese
Beat 6 eggs and add together with 2 cups milk (not skim), 1/2 tsp. MNI SKUYA /mnee-skuh-yah (salt), 1/2 tsp. YAMNUMNUGA PI/yah-mnue-mnue-ghah pee (pepper), 1/4 tsp. dry mustard, 2 tsp. paprika, and one can chopped green chilies.  Stir together.
Pour over bread mixture.
Cover and bake at 325-350 for one hour.

*Can be made ahead and refrigerated overnight to be baked in the morning.
Serve with salsa and fresh fruit!
